Tasting Notes
Bright yellow-gold colour with intense green highlights. Pronounced, scented floral aromas of white flowers with hints of exotic fruits, sandalwood and anise. Ripe fruit and chalky minerality leading in the back-palate. 2019 vintage was marked with good, refreshing acidity, which brings a lot of verticality to the wine and transparency to the minerality. An expressive wine with freshness and a saline concentration that leaves us in no doubt of the albariza vineyards ad proximity of the sea, from where it is produced.

Terroir and Viticulture
From the Pago de Grañina, the Palomino Fino grape is organically cultivated and hand-harvested. Grapes are sorted at the selection table in the vineyard and only the highest quality go to press.

Vinification
Must is placed in stainless steel tank for a short maceration at very low temperatures (6 – 7ºC) for 24 to 48 hours. The must is moved to another deposit for spontaneous fermentation under a controlled increase in temperature to about 15ºC to preserve varietal grape aromas. Fermentation to dryness during a period of approximately 20 days. Aged on the fine lees in natural suspension for a further 5 months in deposit.

Grilled prawns or langoustines, pasta vongole, clams or shellfish with garlic sauces, grilled fish with caper sauces, hard cheeses, olives, jamón de pata negra.
