Tasting Notes
Straw yellow colour with green highlights. Fine persistent bubbles forming a delicate crown. Fresh aromas of citrus and stone fruits with floral undertones, combined with notes of butter and brioche. Fresh, with excellent balance of acidity and fruit concentration and a rich, creamy mouthfeel. A sprightly and carbonic finish that lingers on the palate.

Terroir and Viticulture
Vineyards located in the coastal zone Alt Penedès with maritime climate. Well-draining limestone and clay soils.

Vinification
Handpicked and mechanically harvested grapes come from our “Can Bas” vineyard, with average vine age of 15 years. De-stemmed grapes undergo cold soak for several hours in order to maximize the primary aromas. Fermentation takes place in stainless steel tanks at a very low temperature between 12 -14 ºC for several days. The coupage wine obtained undergoes 2nd fermentation in the bottle according to the traditional “Méthode Champenoise”. We use a strain of yeast which increases mannoprotein content in the Cava in order to achieve velvety and creamy mouth feel. Aged for 12 to 15 months in the silence of our cellar in bottle on its lees.

Food pairing
Ideal as aperitif, or with canapés, oysters, moules frites, and all varieties of shellfish. Also, great with fish and chips!
