Tasting Notes
Fresh dark fruits accompany a floral, nose with violets, blueberries, sloes and a fragrant, earthy lift of Mediterranean herbs. Aromatic, nicely-textured palate with fine tannins.

Terroir and Viticulture
Mediterranean climate with maritime influence. Organically-grown grapes sourced from Llano del Sastre vineyard in the Venta del Pino valley. A three-hectare vineyard plot planted with 1,500 vines per hectare, on white, limestone-rich soils at 800m altitude. This wine keeps its varietal character while retaining the herbal lift and freshness of a high-altitude, cool terroir site.

Vinification
Matured for 10 months in second and third year used 500-litre French oak barrels.

Food pairing
Can be enjoyed on its own but also perfect with a variety of savoury or earthy dishes – roasted duck, lamb cutlets, mushroom or artichoke risottos, or simply with a cheese and charcuterie board.
